Ingredients :
Eggs – 2-3 hard-boiled
Potato – 2 small
carrot – 1 small
Coconut oil – 1.5 tbsp
Cardamom – 2-3 no’s
cloves – 3-4 nose
Cinnamon stick – 1/2 inch
Black peppercorns – 1/4 tsp
Onion – 1 cup sliced
Ginger – 2 tsp
Garlic – 2-3 chopped
Green chilies – 4 nos’
Curry leaves – A few
Coconut milk – 1 cup or as required
Pepper powder – 2-3 Pinches
Garam masala powder – One pinch
Salt – To taste
Thick coconut milk – 1/2 cup
Coconut oil – 2 tsp
Shallots – 3 nos’ sliced
Cashews – 5 nos’ (Optional)
Method of preparation :
Heat coconut oil in a pan over medium-high heat. spices and stir it for aroma then add onion, a pinch of salt, ginger, green chili, ginger, and curry leaves then cook until onion turns lite brown. Then add potatoes, carrots and cook for a few minutes. cup hot thin coconut milk and salt according to your taste. Cook covered for a few minutes until potatoes and carrot are completely cooked. Then add boiled eggs and thick coconut milk after that Cook for 3 minutes over low heat. Switch off the flame, then add garam masala, and pepper powder.
For tadka add coconut oil in a small Kadai then add sliced shallots and fry it until light brown then add cashews and cook until it becomes golden. Pour the tadka over the Curry. Delicious Kerala style egg stew is ready to serve.
