KERALA TRADITIONAL BOLI RECIPE

Ingredients :

For Dough: –

All-purpose flour-1 Cup

 Turmeric powder – 1/4 tsp

Water -As required

 Oil -3-4 tbsp

For Filling: –

 Channa dal -1 Cup

Water -To cook chana dhal

Sugar -1 Cup

Turmeric powder -A pinch

Cardamom powder -1/4

 Water -As required

Other ingredients: –

Rice flour – 1/2 Cup

Ghee -As required

Method of preparation :

First please wash Channa dal and cook it well but don’t overcook keep it aside

To prepare the dough, combine turmeric with all-purpose flour in a bowl add water and make a soft dough.

Pour oil over the dough and cover it and keep aside a minimum of 45 minutes.

Drain the cooked Channa Dal. In a pan, add cooked Channa Dal, one pinch of turmeric powder, and sugar. Cook for 5 to 7 minutes or until it turns thick. (do not cook it for long, if you do so, the mixture will dry up)

Switch off the stove, add cardamom powder and mix it well Allow it to cool completely. Divide this filling into equal size balls.

Take a small portion of the dough. Place the filling over this.

Cover the filling with the dough by gently pulling the edges towards the center. Flatten the prepared ball and dust both sides with rice flour.

Roll this to form a thin circle, like chapati.

Turn on the heat and cook it on both sides using ghee
